Having my passion for baking almost completely deflated by none other than Sherry Yard, I decided to return to my roots (Cowtown baby!) and make a 7-Up cake. The recipe is from an unknown church cookbook submitted by Mrs. Philonese Thompson. It's after the jump.

7-Up Cake
Ingredients

3 sticks butter or margarine, softened

3 1/2 cups sugar

6 large eggs

3 cups all-purpose flour

3 teaspoons lemon extract

3/4 cup 7 Up

Cooking spray
Instructions
Preheat oven to 325F. Cream teh butter and sugar in a large bowl for about 25 minutes. Add the eggs, flour, lemon extract, and 7 Up; mix well. Spoon mixture into a 10-inch tube pan coated with cooking spray. Bake for 1 hour and 15 min or until cake tests done when a wooden toothpick is inserted and comes out clean. Add frosting, if desired.
Lemon Icing
INGREDIENTS
* 1/2 cup butter
* 2 tablespoons lemon juice
* 1/2 teaspoon vanilla extract
* 3 cups confectioners' sugar
DIRECTIONS
1. Combine the butter, lemon juice, vanilla, and confectioner's sugar and beat until light and fluffy. Add more confectioner's sugar, or lemon juice to adjust the consistency as needed.






I tried this recipe 5 years ago and have been using it ever since! It's a great recipe and it's a hit....you'll enjoy the cake.
